So if I am having a busy week, (which is every week when you have a little one running around) this is my go to sauce. It doesn’t taste like it is made in thirty minutes, and it is way better than the jarred stuff.

I like making my own sauce to control the sodium levels, and it also gives you the freedom to improvise a bit. Spice it up with some chilis/hot sauce. Or, add some non dairy milk for a lighter take on a vodka sauce.tomatoe sauce

Ingredients

  1. 3 tablespoons olive oil
  2. ½ cup of diced oniontomato soup
  3. 2 cloves of minced garlic
  4. 5 tablespoons tomato paste
  5. 28oz can crushed tomato
  6. 1 teaspoon dried oregano
  7. 1 teaspoon dried basil
  8. Salt and pepper to taste

Directions

  • In a non stick pan over medium heat add oil, onion, garlic, and tomato paste. Cook for about 5 minutes until it it caramelized
  • Add the can of tomatoes, oregano, and basil. Reduce to a simmer, and cook for about 15-20 minutes until the desired consistency
  • Salt and pepper to taste.

30 minute tomato sauce

Obviously it goes well with spaghetti, but there are other ways to use this recipe. 

  1. Base for countless varieties of soups, like minestrone, pasta fagioli, chili etc.
  2. Pizzas
  3. Base for any other sauce
  4. Ratatouille
  5. Marinades

It lasts 7 days in the fridge. Or 3 months in the freezer.
