Baked Salmon Over Asparagus

One of my husbands favorite foods is fish. I am sorta the, I can take it or leave it kinda girl. I do however love my fresh caught northern right from our dock. Living on a lake has great advantages as far as feeding yourself goes. Seems no matter the day, if one really is yearning for a fish dinner we can go out and bring back either northern, or walleye right from our own lake. Love that!

But, another favorite fish is wild caught salmon, which of course we can’t catch on our small inland lake. But, we now also have a boat for the big lake, which where we live is Lake Superior. We bought a 27ft Sea Ray Sundancer and now hubby can catch many other species of fish, including many varieties of salmon. So, not only do we have the choice of fish from the end of our dock, but also from Lake Superior. We could eat fish 5 nights a week if we wanted to.

This recipe is simple, yet a very delicate meal. I say delicate because when plated it looks like you are in a fine dining restaurant when yet you have saved a ton of money preparing it right in your own home. Ingredients are simple, directions are simple, but enjoying it is very mouth pleasing.

This is a very healthy recipe and fits into most eating styles like keto, low carb, paleo, and more.

 

Ingredients:

A piece of salmon
– 1 tablespoon olive oil
– Asparagus
– 3-4 slices of lemon
– 2 cloves of garlic (chopped)
– Salt and black pepper
– 2 oz butter
– 1/2 cup white wine

If you don’t have a local place that sell salmon you can always order it from Amazon. 

 


 

Directions:

Salmon – Pick a nice piece of salmon and preheat the oven in 450 degrees F. Season first the salmon with salt and pepper and olive oil. Leave it for about 10 minutes. Put in a
pan 1 TBS olive oil. After the oil is hot, place the salmon with skin side down. Sear it till the skin becomes crispy and flip it. Cook it for about 2-3 minutes and add the wine. Put
inside one cube of butter , lemon juice, and chopped garlic. Flip the salmon with skin side down and place some butter on top , some lemon slices and send it in the oven.
Let it cook for about 10 – 12 minutes and carefully take it out.

 

 

 

Asparagus – In a pot put water and salt and leave it broil. When the water is broiling, put asparagus in and leave it broil for about 2-3 minutes. Take asparagus out and
directly put it in cold water and leave it cool down. Season asparagus with olive oil, salt and black pepper. Take a pan, and drizzle it with olive oil (just a little touch). After the
pan is hot, put asparagus in. Cook it until asparagus get nicely caramelized.

 

 

 

Lemon Butter – Get a small piece of butter, put it in a pan and warm it up. After the butter is melted, add some lemon juice, salt, pepper and optionally garlic.
Plate the salmon and asparagus as shown in the pictures or in your desired way, and put a little lemon butter on top.
The plate is ready to enjoy!

 

 

This is a great meal to make for a nice romantic evening or date night for you and your partner.
