So if I am having a busy week, (which is every week when you have a little one running around) this is my go to sauce. It doesn’t taste like it is made in thirty minutes, and it is way better than the jarred stuff. I like making my own sauce to control the sodium levels, and it also gives you the freedom to improvise a bit. Spice it up with some chilis/hot sauce. Or, add some non dairy milk for a lighter take on a vodka sauce.
Ingredients
3 tablespoons olive oil
½ cup of diced onion
2 cloves of minced garlic
5 tablespoons tomato paste
28oz can crushed tomato
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Instructions
In a pot over medium heat add oil, onion, garlic, and tomato paste. Cook for about 5 minutes until it it caramelized
Add the can of tomatoes, oregano, and basil. Reduce to a simmer, and cook for about 15-20 minutes until the desired consistency
