These are wheat free cookies and couldn't be easier to make. The Oat flour gives it a great texture. It's nice and crumbly and perfect for any person who loves cookies.
Ingredients
1¾ cup oat flour
½ teaspoon baking soda
¼ teaspoon salt
1 tablespoon flaxseeds
¼ cup unsweetened almond milk
¼ cup dark brown sugar
⅓ cup grape-seed oil
1 teaspoon vanilla extract
¾ cup vegan chocolate chips
Instructions
Preheat oven to 375 degrees F
Sift together oat flour baking soda and salt
In a separate bowl whisk the flaxseeds and milk. Add the brown and granulated sugar and stir.
Then add vanilla and oil to mixing bowl. Mix until emulsified
Drop batter by tablespoon on ungreased cookie sheet. Leave about an inch between each cookie.
Bake for 10-12 minutes until they are golden brown on the bottom
Remove from oven and cool for 5 minutes on the baking sheet.
Transfer to wire cooling rack.
Tip-If you can't find oat flour you can make your own. Take roll oats and put in blender or food processor until it looks like flour
