Vegan mac and Cheese

This mac and cheese recipe is so easy to prepare. It is cheesy, delicious, and can be used on so many other things than pasta. The base of it is cashews so it’s a great source of protein too!
Ingredients
  • 1 ½ cup cashews
  • ¼ cup nutritional yeast
  • 3 tablespoons apple cider vinegar
  • ½ teaspoon dijon mustard
  • 1 ½ teaspoons sea salt
  • ¼ teaspoon turmeric
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¾ cup water
Instructions
  1. Prepare pasta according to box directions. I use whole wheat. But you can easily replace it with any sort of pasta. That includes gluten free
  2. Place all ingredients in a food processor. Blend until smooth. If too thick add water to thin to desired consistency
  3. Pour mixture over warm pasta and serve immediately.
Notes
For a baked Vegan Mac and Cheese, preheat the oven to 350ºF while you prepare the pasta and sauce. Pour the pasta and sauce into a cast iron pan, along with any topping you like and bake until the top looks golden. about 15-20 minutes.
