Instructions
In a medium sized frying pan, toast almonds for a few minutes and then remove from the pan. In the same pan, sauté the sweet and jalapeno peppers. Add tomatoes. Season with chili powder, cumin and salt.
Bring this mixture to a boil. Reduce heat, cover and simmer for 5 minutes. Next, carefully slide each egg into the mixture by first cracking the egg into a small cup and gently pouring in, once at a time. When eggs have all been transferred over, cook for approximately 5 minutes or until whites are set. Spoon egg and tomato mixture onto serving plate. Sprinkle with almonds. Arrange avocado on the plate. Season with salt and pepper. Serve hot.
