Ingredients
1 cup lukewarm water
2 teaspoons dry yeast
1 teaspoon honey or agave
1½ cup whole wheat flour
1¼ cup+1 tablespoon all-purpose flour + extra if needed
1 teaspoons salt
1 tablespoon extra virgin olive oil
Instructions
Mix water yeast and honey together. Let sit for five minutes. Then add the olive oil
In separate bowl, combine flours salt.Mix the dry and wet ingredients together
knead for about five minutes on a floured surface. Until it is elastic
Make it a ball shape. Place in a oiled bowl and cover with cloth
Let sit for 1 hour
Preheat oven to 450 degrees
Take dough out of bowl. Gently deflate it.
Cut into 8 equal pieces.
Make them into balls
Roll them out to ¼ inch in thickness.
As you do each one, cover the others with a damp cloth to keep from drying out
Place prepared dough on cookie sheet.
Four pitas at a time on the baking sheet
Should be in the oven for about 5 minutes, until they puff up.
Let cool on the cooling rack.
Then enjoy!
