Vegan Baked Beans

Serves: 6 servings
- 2 tablespoons olive oil
- 1 medium diced onion
- 3 cloves minced garlic
- 1 15 ounce can of tomato sauce or diced tomato
- ½ cup pure maple syrup
- 2 teaspoons of mustard powder
- 1 teaspoon salt
- ¼ teaspoon all spice
- 1 bay leaf
- 2 15 ounce cans of white beans. Drained and rinsed. Cannellini Beans or Great Northern beans work great
- Preheat oven to 350 degrees
- Preheat oven safe pot over medium heat
- Saute oil for ten minutes in olive oil. Brown them. Add garlic and saute for one minute
- Add tomato sauce
- Add maple syrup, and all the spices to the pot.
- Cook for 5 more minutes
- Add Beans
- Place pan in the oven with a cover
- Bake for 1 hour. Stir after 30 minutes
- Keep warm until ready to serve
