I have made these flourless peanut butter cookies countless times, they are one of my go to recipe for a fun sweet treat.
This is what I like to cook with my daughter. She loves helping. They always come out delicious. And every time she takes her first bite… her eyes light up. She exclaims “mommy it’s soooo good.”
They are flourless. So all of your gluten free friends will be happy.
The coconut sugar gives it an awesome earthy flavor. Not too sweet. An added bonus, they are packed with protein. A great option for a little on the go snack!

Ingredients
- 1 Cup All Natural Peanut Butter
- 1 Cup of Coconut Sugar
- 1 Egg
Instructions
- Preheat oven to 350 degrees fahrenheit
- Lightly beat the egg. blend the peanut butter with egg. Add sugar
- Roll into 1 inch balls. place one in apart on ungreased cookie sheet lined with parchment paper
- Flatten cookies with twine of fork, making a criss cross pattern
- Bake for about ten minutes. Rotating halfway. Take them out when slightly golden brown around the edges
- Cool on baking rack
