Ingredients:
- 3 cups of diced turnip
- 2 cloves of garlic, minced
- 1/4 cup of milk
- 3 T meltedΒ butter
- Salt and pepper to taste
Directions:
Add turnips to a sauce pot and fill with water until they’re just covered.
Bring to a boil, then lower the heat to medium and allow to simmer until tender.
Drain the water, and in the same pot as you cooked them, mash the turnips using a potato masher.
Stir in milk, vegan butter and garlic pieces. Heat briefly to help the flavors meld. Sprinkle with salt and pepper, then stir well again.
Serve as is, or puree in a food processor for an extra smooth texture.
