The banana bread after it has cooled for 20 minutes. It’s sliced and ready to go. I put golden raisins and toasted walnuts in this batch.
Ingredients
- ⅓ cup apple sauce
- ¼ cup almond milk
- ½ cup honey or maple syrup
- 1 ¾ cup whole wheat flour
- ½ teaspoon ground cinnamon
- ½ teaspoon salt
- 1 teaspoon baking soda
- 1 cup mashed ripe bananas
- 1 teaspoon vanilla extract
- 2 large eggs
- ½ cup optional mix ins. Chocolate chips, dried fruit, nuts etc
Directions
- Preheat oven to 325 degrees Fahrenheit
- Grease 9×5 inch pan
- Combine whole wheat flour, cinnamon, salt, and baking soda. Place in bowl. Put aside
- Whisk eggs and honey together.
- Place mashed bananas in mixture.
- Add vanilla extract and milk.
- Then gently fold the dry ingredients into wet ingredients. DO NOT OVER MIX. This will lead to a tough cake.
- Tip- If you are adding nuts to mixture make sure to toast them beforehand. Makes a big difference.
