I recently came across a great overnight oats with chia seed recipe and thought I would share it. It is an awesome spin on your regular breakfast
My family eats oats every morning. We vary it with different toppings and spreads.
Ingredients
- 1/2 cup non dairy milk of choice. I use unsweetened vanilla almond milk
- 3/4 Tbsp chia seeds
- 2 Tbsp mixed seed nut butter.
- 1 Tbsp maple syrup, honey, agave. Or any preferred sweetener
- 1/2 cup gluten-free rolled oats, or regular rolled oats if not gluten free
Additional Toppings
- Sliced banana, strawberries, or raspberries
- Flaxseed, hemp seed, pumpkin seeds
- Granola
Directions
- In a mason jar or small bowl with a lid, add almond milk, chia seeds, mixed seed butter and maple syrup (or other sweetener) and stir with a spoon to combine.
- Add oats and stir a few more times.
- Cover tight with a lid or seal,
- Refrigerator overnight. Minimum of 6 hours
- The next day, it is ready to eat. Then you can personalize it with any topping of choice.open and enjoy as is or garnish with desired toppings.
- Overnight oats will keep in the refrigerator for 2-3 days, though best within the first 12-24 hours. Do not freeze.

These are vegan overnight oats with chia peanut butter and almond milk. I used gluten free oats. It is a great way to start your day!
Ingredients
- 1/2 cup non dairy milk of choice. I use unsweetened vanilla almond milk
- 3/4 Tbsp chia seeds
- 2 Tbsp peanut butter, or any nut butter of choice
- 1 Tbsp maple syrup, honey, agave. Or any preferred sweetener
- 1/2 cup gluten-free rolled oats, or regular rolled oats if not gluten free
- Additional Toppings
- Sliced banana, strawberries, or raspberries
- Flaxseed, hemp seed, pumpkin seeds
- Granola
Instructions
- In a mason jar or small bowl with a lid, add almond milk, chia seeds, peanut butter, and maple syrup (or other sweetener) and stir with a spoon to combine. The peanut butter doesn’t need to be completely mixed with the almond milk (doing so leaves swirls of peanut butter to enjoy the next day).
- Add oats and stir a few more times. Then press down with a spoon to make all the oats covered in the almond milk
- Cover tight with a lid or seal,
- Refrigerator overnight. Minimum of 6 hours
- The next day, it is ready to eat. Then you can personalize it with any topping of choice.open and enjoy as is or garnish with desired toppings.
