This vegan mac and cheese recipe is so easy to prepare. It is cheesy, delicious, and can be used with so many other dishes. The base of it is cashews so it’s a great source of protein too!
This recipe could not be easier. You literally place it all in a blender and you are good to go!
After the sauce is blended, you simply toss the cashew cheese with the warm pasta. It is absolutely delicious and such a healthy take on the classic mac and cheese.
Ingredients
- 1 ½ cup cashews
- ¼ cup nutritional yeast
- 3 tablespoons apple cider vinegar
- ½ teaspoon dijon mustard
- 1 ½ teaspoons sea salt
- ¼ teaspoon turmeric
- ¼ teaspoon garlic powder
- ¾ cup water
- 1/4 teaspoon onion powder
Directions
- Prepare pasta according to box directions. I use whole wheat. But you can easily replace it with any sort of pasta. That includes gluten free
- Place all ingredients in a food processor. Blend until smooth. If too thick add water to thin to desired consistency
- Pour mixture over warm pasta and serve immediately.
Tip-For a baked Vegan Mac and Cheese, preheat the oven to 350ºF while you prepare the pasta and sauce. Pour the pasta and sauce into a cast iron pan, along with any topping you like and bake until the top looks golden. about 15-20 minutes.
