So if I am having a busy week, (which is every week when you have a little one running around) this is my go to sauce. It doesn’t taste like it is made in thirty minutes, and it is way better than the jarred stuff.
I like making my own sauce to control the sodium levels, and it also gives you the freedom to improvise a bit. Spice it up with some chilis/hot sauce. Or, add some non dairy milk for a lighter take on a vodka sauce.
Ingredients
- 3 tablespoons olive oil
- ½ cup of diced onion
- 2 cloves of minced garlic
- 5 tablespoons tomato paste
- 28oz can crushed tomato
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Directions
- In a non stick pan over medium heat add oil, onion, garlic, and tomato paste. Cook for about 5 minutes until it it caramelized
- Add the can of tomatoes, oregano, and basil. Reduce to a simmer, and cook for about 15-20 minutes until the desired consistency
- Salt and pepper to taste.
Obviously it goes well with spaghetti, but there are other ways to use this recipe.
- Base for countless varieties of soups, like minestrone, pasta fagioli, chili etc.
- Pizzas
- Base for any other sauce
- Ratatouille
- Marinades
It lasts 7 days in the fridge. Or 3 months in the freezer.
