Fruit Smoothie Bowl

Summer might be over here in Minnesota, but I was just in Florida and you know that summer is basically year round there. No matter where you live, there is no reason one can’t enjoy a yummy fruit smoothie bowl, for breakfast, lunch or dessert.

Blueberries are a great fruit to eat and even if you are living a low carb/keto lifestyle you can still eat a small amount of blueberries. They are packed with so many good health benefits that you might want to keep fresh or frozen on hand all year round for many different recipes.

This Blueberry Smoothie Bowl is a blend of strawberries and blueberries with yogurt and almond milk. It’s topped with fresh berries and kiwi slices. You can use regular yogurt or greek yogurt for this. Just depends on your preference. This calls for fresh fruit, but if you like frozen fruit you can substitute for that too. Let your tastebuds be your guide to what will make this perfect for you.

Blueberry and Strawberry Fruit Smoothie ~
SERVES 1

INGREDIENTS:

1 cup strawberries

1 cup blueberries

½ cup vanilla yogurt

1 banana (optional)

2 tablespoons almond milk

 

TOPPINGS:

blueberries, chopped strawberries, kiwi slices, nuts, chia seeds, coconut flakes, granola, or anything your heart desires. 


DIRECTIONS:

In a blender, combine the fresh or frozen strawberries, blueberries, yogurt and almond milk.  For a creamier smoothie bowl with a boost of potassium, add the banana.

Process until smooth and creamy and at your desired consistency.

Pour the berry smoothie mixture into a bowl.

Top with blueberries, chopped strawberries, and kiwi slices.  Serve immediately.
