INGREDIENTS
-1 onion chopped
-10 ounces (give or take) of greens
-1 minced garlic clove
-5 beaten eggs
-3 cups of vegan cheese (optional- I have replaced the cheese with whatever is in my fridge)
-pinch of salt, ⅛ tsp of pepper
INSTRUCTIONS
- Preheat oven to 350 degrees fahrenheit
- Grease a 9 inch quiche dish. (I have a square one, but round looks a bit nicer)
- Saute onions garlic and greens
- Combine eggs, cheese, salt and pepper in bowl. Add greens
- Scoop in pan
- Cook for 30 minutes. Rotate halfway through.
I check mine after 24 minutes. If a toothpick comes out clean, it is good to go.
What is great about this recipe is you can personalize it. Add rice, add beans…go crazy…and Enjoy!
This quiche recipe is one my main go to meals. If a family function suddenly comes up… we are having quiche. If i need to clean out the fridge… guess what is on the menu. You guessed it, quiche!
You can improvise many ingredients. The cook time stays the same. The fact that it is crustless saves time and carbs. A win win.
My 2 ½ year old daughter loves it. I sneak so many veggies in there. I have thrown chia seeds, beans, rice, potato… you name it, and it has been a part of my quiche recipe.
Other ingredient ideas
- Salsa
- Hot sauce
- Any fresh herb
- Nutritional yeast gives a nice cheesy flavor
- Vegan sausage tastes AMAZING (or regular sausage)
- Quinoa
- Potatoes
Leftover Ideas
- Crumble it up and put it in tacos/burritos
- Break it up and make some fried rice
- Mix it up with any grain. Quinoa, barley. Couscous.
- Saute it up with some potatoes and make some hash
- Throw it on any type of bread. And bam…breakfast sammie
Also, fun little tip: I recently tried my quiche recipe in a muffin tin. Not only are they adorable but you can customize them a bit.
Again, the cook time and temp is the same. Great for on the go meals or for feeding large groups quickly.
