It is Hanukkah! And the one thing my family is expecting on our holiday table is latkes. I thought i would take a shot of making a slightly healthier version.

My first trick is to get rid of the moisture in a salad spinner. Trust me, it works wonders!

Salad spinner potatoes

My husband got me the ninja foodie for the holidays…and this thing is incredible. I am almost positive it does laundry on top of everything else.

The air fryer was set at 375 degrees for 12 minutes.

Air fryer potato pancake

Serve with apple sauce, or sour cream.

Ingredients

  1. 16 ounces of grated potatoes
  2. 1/2 cup shredded onion
  3. 1 egg
  4. kosher salt and ground black pepper to taste
  5. 2 tablespoons whole wheat bread crumbs
  6. avocado oil cooking spray
  7. 1 tablespoon of fresh oregano

 

Directions

  • Preheat an air fryer to 375 degrees F. Lay out a sheet of parchment or waxed paper. This helps with easy cleanup
  • Place the potatoes and shredded onion in a salad spinner. This is a great trick to get rid of a lot of moisture.
  • Whisk together egg, oregano, salt, and pepper in a large bowl. Stir in potatoes and onion with a fork. Sprinkle whole wheat bread crumbs on top and stir until ingredients are evenly distributed. Use your hands to form mixture into ten 3- to 4-inch wide patties. Place patties on the parchment or waxed paper.
  • Spray the air fryer basket with cooking spray. Carefully place half of the patties in the basket and spray generously with cooking spray.
  • Air-fry until crispy and dark golden brown on the outside, 10 to 12 minutes. (Check for doneness at 8 minutes if you prefer a softer latke.) Remove latkes to a plate. Repeat with remaining patties, spraying them with cooking spray before cooking.
