It is Hanukkah! And the one thing my family is expecting on our holiday table is latkes. I thought i would take a shot of making a slightly healthier version.
My first trick is to get rid of the moisture in a salad spinner. Trust me, it works wonders!
My husband got me the ninja foodie for the holidays…and this thing is incredible. I am almost positive it does laundry on top of everything else.
The air fryer was set at 375 degrees for 12 minutes.
Serve with apple sauce, or sour cream.
Ingredients
- 16 ounces of grated potatoes
- 1/2 cup shredded onion
- 1 egg
- kosher salt and ground black pepper to taste
- 2 tablespoons whole wheat bread crumbs
- avocado oil cooking spray
- 1 tablespoon of fresh oregano
Directions
- Preheat an air fryer to 375 degrees F. Lay out a sheet of parchment or waxed paper. This helps with easy cleanup
- Place the potatoes and shredded onion in a salad spinner. This is a great trick to get rid of a lot of moisture.
- Whisk together egg, oregano, salt, and pepper in a large bowl. Stir in potatoes and onion with a fork. Sprinkle whole wheat bread crumbs on top and stir until ingredients are evenly distributed. Use your hands to form mixture into ten 3- to 4-inch wide patties. Place patties on the parchment or waxed paper.
- Spray the air fryer basket with cooking spray. Carefully place half of the patties in the basket and spray generously with cooking spray.
- Air-fry until crispy and dark golden brown on the outside, 10 to 12 minutes. (Check for doneness at 8 minutes if you prefer a softer latke.) Remove latkes to a plate. Repeat with remaining patties, spraying them with cooking spray before cooking.
