I love making this vegan walnut basil pesto in bulk and putting some in the freezer. That way I always have this on hand. When I have a busy week, it is a great thing to be able to whip up a fast homemade dish.
Ingredients
- 2 cups packed fresh basil. no stems
- 3 Tbsp unsalted walnuts
- 3 large cloves garlic
- 2 Tbsp lemon juice
- 3-4 Tbsp nutritional yeast
- 1/4 tsp sea salt
- 2-3 tablespoons olive oil
- 3-6 Tbsp water (plus more as needed)
Directions

- Place all ingredients in a blender. I use the NutriBullet.
- Salt and season as needed
- Tip- For an enhanced flavor, toast your walnuts for a few minutes in a 350 degree oven. The natural oils are released and it makes a huge difference!
