I think we can all agree that pesto is amazing. I have been experimenting with different types of pesto for awhile now. Lately I have been way into cilantro. So here it is….cilantro pesto. It’s a great take on the classic. Use it in place of mayo on your sandwiches. Also makes a great spread for grilled cheese!
Ingredients
- 1 tablespoon white vinegar
- ¼ cup nutritional yeast
- Bunch of cilantro
- ½ cup grape-seed oil
- 4 garlic cloves
- 1/2 cup walnuts
- Salt to taste
Directions
-
- Place all ingredients in a blender. I use the NutriBullet.
- Salt and season as needed
- Tip- For an enhanced flavor, toast your walnuts for a few minutes in a 350 degree oven. The natural oils are released and it makes a huge difference!
