My take on the secret menu item from Chipotle. I give you….The Burittodilla!

So I gotta say, this is the most fun thing I have made in awhile. My husband came downstairs for dinner like it was Christmas morning. It is super impressive and awesome to look at. And even more fun to eat

After you sprinkle the cheese, feel free to add a flavorful spread or hot sauce. I had some leftover cashew cheese spread and put that under the shredded cheese. This is the fun part. You can manipulate the flavors in so many ways.

riceThen the assembly. I added extra veggies that I have in the fridge. There is some quinoa in there too. But the standard recipe remains the same. After you assemble it, you simply roll it and put it on the stove.

Ingredients

  1. 2 whole wheat burrito tortillas
  2. ⅓ cup vegan cheese of choice
  3. ½ cup brown rice cooked
  4. ¼ cup of black beans (or whichever you prefer)
  5. Any other veggies you would like to throw in
  6. Any type of vegan meat. I used beyond meat crumbles

 

Directions

  • Take the first tortilla and layer it with your vegan cheese
  • Top it with your second tortilla
  • Place your burrito fillings in the center of the tortilla
  • And gently… GENTLY Roll your burrito. I have busted a seam or two in my time
  • Poke a few holes in the burrito
  • Then seam side down place on preheated pan to seal the burrito and to melt the cheese
  • Carefully watch until it is your preferred crispiness.
  • Then devour
