This recipe is using the same crust that I used in the Hemp crusted tofu sticks. I had some leftover from the recipe…I saw some asparagus, and bam! Something new and fun. It goes awesome with my keto/vegan cashew honey mustard dip.
Ingredients
- 1/2 cup whole wheat bread crumbs
- 1/2 cup hemp hearts
- 2 tsp chili powder
- 2 tsp garlic powder
- 1 tsp sea salt
- 1/2 tsp ground black pepper
- 2 tbsp dijon mustard
- 1 tbsp unsweetened almond milk
- 1 tsp of Jersey Bonfire Garlic hot sauce
Directions
- Preheat oven to 425 degrees Fahrenheit.
- Line baking sheet with parchment paper.
Served with keto/vegan cashew honey mustard dip - Mix milk with mustard (and hot sauce if using).
- Combine dry ingredients.
- Roll asparagus in wet mixture, then dry mixture.
- Place on a baking sheet, and repeat with remaining asparagus spears.
- Bake for 12 minutes, rotating halfway.
Just another fun way to spruce up your vegetables. It works great as an appetizer, or a side dish. What I love about this is that you can really personalize the breadcrumb mixture, or the wet mixture. You can take it an asian route and add some soy sauce, and a little honey. An endless stream of possibilities!
